I roast vegetables all the time: cauliflower, broccoli, kale, and so on. With how often I roast vegetables, the oven may very well be my favorite kitchen appliance.

When I’m cooking, I’m all about efficiency. Roasting vegetables takes surprisingly little effort. I preheat the oven and prepare whatever vegetables I have on hand. After tossing them into the oven, I set a timer, wait 25 minutes, and viola! Dinner is served. Tasty, healthy, crispy roasted vegetables.

Lately, I’ve been really enjoying cauliflower (cauliflower rice and cauliflower crust cheese pizza). This week, when I was grocery shopping, I saw purple cauliflower and got excited. Purple was my favorite color as a child. I can only imagine if I had known about purple cauliflower back then!

Before college, the combination of banana with peanut butter was unfathomable to me. However, during my Freshman year, that all changed. Bites of ripe banana interspersed with smooth, creamy peanut butter soon became my snack of choice. As a mix of protein and sugar that could store well unrefrigerated, it was this busy college student’s perfect midnight study break snack.

Years later, one ingredient banana ice cream is now a staple in my home. I love that I can get the sweet, frozen creaminess of ice cream with a single natural ingredient, the humble banana.

Even peanut butter frequently shows up in my cooking, but rarely in the now-classic combination of peanut butter and banana.

So, today, I want to throw it back to my college days with an indulgent twist—a Peanut Butter + Banana Ice Cream Sandwich!

Egg-White Chili Shakshuka

This Egg-White Chili Shakshuka combines three of my favorite things: egg-whites, chili, and shakshuka in just the best way. Shakshuka is usually a dish with poached eggs on top of a tomato, pepper, onion stew and is a delightfully satisfying breakfast.

However, sometimes my picky eating gets the best of me and my distaste of peppers and egg yolk ruins the experience. In an effort to make a Shakshuka that was perfect to my taste, I decided to make a version without the peppers and egg yolk. To bring more hardiness to the dish, I added kidney beans, which matched the tomato flavors perfectly.

This healthy, filling breakfast is packed with vegetables and healthy protein. It happens to also be vegetarian and gluten-free. By holding the eggs, it can be a delicious vegan stew for lunch or dinner as well. This is a versatile dish that translates across dietary restrictions and meal times. I’m super happy with the end result of my Egg-White Chili Shakshuka and I hope you enjoy it too!
